When it comes to weddings flowers and cakes go hand in hand. Yes traditional cakes have a bad reputation for fussy, acid bright sugar flowers, often concrete hard royal icing and not exactly matching the fresh flowers on the day. Well I’m happy to say that times have changed, and I’m here to inspire with 6 beautiful floral wedding cakes for those wanting fresh, sugar or wafer flowers.

Fresh Flowers

Let’s start with fresh flowers. This is an area where many cake artists fall out. Fresh flowers can be difficult to work with, they wilt, they don’t go in the direction we want and sometimes they’re not food safe, but with a little help from the florist and couple they can absolutely look amazing and work well. You need to think about the type of flower you are going to use, roses aren’t toxic and are hardy so will withstand being on display all day long, as will wax flower. When wrapped correctly and placed in food safe picks or cocktail sticks, these flowers look so pretty. They will match your florists flowers too. I ask my couples to pay their florist directly for fresh flowers but I always put them on the cake as it’s an important part of the design process for me, plus I can make them food safe too. I do advise an earlier cake cutting when using fresh flowers as even the hardiest of flowers lose their lustre after a few hours on display, so it’s definitely worth bearing this in mind.

Sugar Flowers

Sugar flowers have moved on since your parents day, and most certainly aren’t the fussy style of yester year. A skilled artist (that’s me btw) can hand craft delicate and realistic sugar flowers to match your fresh flowers as closely as possible. One of the best things about sugar flowers is that they don’t have to comply with the rules of nature, we can make them go in any direction we wish, so if you want them to twist around a side bar spacer, or the float off the cake we can do it. They are food safe and won’t wilt. If carefully removed they can be kept for many years as a beautiful reminder of your wedding day.

Dried Flowers

Dried flowers have grown in popularity over the last few years, with the rise of boho style weddings. The are pretty great for cake design too as they don’t wilt and can stay looking beautiful throughout your wedding day. We do have to take care with some dried flowers as they can cause respiratory issues, so I don’t advise pampas on cakes, but others such as ruscus look lovely and as long as they are clean and wrapped correctly are a great addition to wedding cakes. I often like to combine sugar or wafer flowers with some dried elements to bring out a more full and considered design.

Edible Pressed Flowers

Pressed flowers never fail to look wonderful on wedding cakes. They perfectly suit a romantic English country wedding, and they’re food safe too. The design possibilities are pretty endless too, so let your cake designers ideas run wild. this 4 tier looked so beautiful with a flowing asymmetric design.

Sugar - but make it simple

Sometimes couples know that they want some floral detailing but they don’t want the full bouquet creating, so this delicate white cake is perfect. This design picks up on the beautiful lace detailing on the clients dress and creates a simple and elegant white wedding cake, perfect for a monochrome, black tie wedding for stylish couples. You could create this with colour too, but with the flowers kept simple it creates a gorgeous elegant feel to the cake.

Wafer Paper

Wafer paper is a relatively new medium and one I’m falling in love with. It’s particularly good for creating the fuller flowers such as peonies or dahlias. They are food safe the same as sugar flowers and will last throughout the day. They are definitely something you’re going to be seeing more of in the future as they look so amazing on wedding cakes.
